Sundays With Joy / Chocolate Avocado Cake

Please excuse our my tardiness with this post, as Michelle and I are vacationing on Daytona Beach at our annual timeshare/ family reunion. This presented us with bit of a challange as we only have a “kitchenette” to work with in making our chocolate avocado cake 🙂

We mashed our avocado by hand with a fork and the batter came together before we knew it. I even sneaked subbed in a 1/2 cup of rum for 1/2 cup water. We decided to bake a cake instead of cupcakes so we poured our chcolately somewhat lumpy batter into two 8″ pans and baked in our tiny oven – which was way off time wise- but I digress. We couldn’t find any vegan butter, and since no one in our 30 plus party of people is vegetarian we decided to go full on real buttercream….

I know! I know! Sorry! ….and then… we ran out of cocoa powder. So we made rum buttercream!
Here is our recipe adapted from Joy’s Vegan chocolate frosting.

1.5 cups unsalted butter – softened
1.5 tbl unsweetened cocoa powder
3-3.5 cups powdered sugar
1 tea vanilla extract
1 tbl rum extract
1-2 tbl whole milk

Beat butter until smooth and creamy. Add the cocoa powder and mix to incorporate. Add the powdered sugar in batches. Don’t forget to scrape down or bowl in between additions so you get an even mix! Add vanilla and rum and incorporate. Add milk and mix until frosting is the consistency you desire!

We garnished our cake with some cherries took it out to the crowd for dessert.
Now absolutely nothing against Joy, but my family is no where near as adventurous in their food choices as I. So I wasn’t planning on telling them there was avocado in the cake until afterwards. However, somehow the news got out and boy it spread like wildfire….people at the condo were asking if “that” was the “avocado cake” and I had no clue who they were! We had a crowd that’s for sure…..of gawkers… finally someone bravely tried some…. and then another…. and then another….. and the next time I turned around….. there was no cake…literally…. no cake….I was stunned……Michelle and I are now very popular with our extended family who have stopped in several times today just to see “what’s cooking” ….Thanks Joy … for making believers out of my “traditional family”. You would be welcome here anytime…in fact I believe they are making quiche and avocado fries tomorrow ….no lie 🙂
